ROASTED BUTTERNUT-SQUASH AND RED PEPPER CHILLI SOUP - WARM AND COMFORTING :)

                    SOUP glorious Soup - warm and comforting on cold winter days

Currently I have a stash of butternut squashes lurking at the bottom of the veg rack, that need something magical done to them - on the wings are red pepper, waiting in line to be married up with another veg to create some comfort food. 

"Soup!" my husband calls out - "make some of your soup" - 

So here it is 

ROASTED BUTTERNUT-SQUASH AND RED PEPPER CHILLI SOUP

                                                                   

INGREDIENTS

1 kg of Butternut-squash - deseeded

1 large red pepper -deseeded

1 large onion - chopped

3 cloves of garlic

1 fresh chilli - your choice and heat tolerance!

1ltr of chicken stock

1 tub of cream cheese/fraiche 

                                                                         

TO MAKE

Peel and de-seed the butternut-squash - place on a baking tray and drizzle with olive oil.  Heat oven to 200C/180C fan/gas 6.  Roast for 30 minutes, turning once during cooking, until golden and soft.

                                                                            

Meanwhile in a large pan, melt the butter and fry off the onions, garlic and red peppers and 3/4 of the chilli  on a low heat - make sure the onions are nice and soft - approx 15 mins

                                                                           

When cooked, take the butternut-squash out, after checking its cooked and soft, - dice up and add the squash to the onions etc , add the stock and  a good dollop of cream cheese/fraiche to this mix and stir. 

                                                                          

                                                                           

                                                                        

Option now to either hand-wizz the mix down or for a smoother soup pour the mix into a blender and blitz - this is better done in batches so as not to 'over-flow' ....

                                                                         

Return the mix to the pan and stir until hot - over a low heat

Pour into bowls and add some sesame seeds - serve with crusty bread, warm flat breads

Beautiful! I make a similar one but have never thought to add some cream cheese to it, I will try this the very next time I make it. Looks delish!

yes its a little different, but makes it creamy and cools the 'chillies' down a bit!

I can imagine, I think it sounds terrific!
