What does the color of your food mean?

Fresh fruits and vegetables are the perfect way to make your meals extra tasty and healthy.Here is  A colorful and Quick overview of different fruits and vegetables and the color functions:

Orange

Carrots are good for your eyes, that's something we often hear. But what does this actually mean? In carrots there are many beta carotene that are good for sight seeing. The large amount of this substance ensures the orange color. The sweet potato is also full of this substance. This is not a family of potatoes but a root crop!

Purple

Purple fruits and vegetables remain special. What about the beautiful deep-red color of the eggplant! In Belgium we especially know this dark variant, but did you know that white and striped eggplants also exist? The blue berry gets its color pale blue color through the dust anthocyan, which is good for the flow of your blood vessels. 

Green

Green leafy vegetables like spinach, duckweed, rucola and kale are full of antioxidants, vitamins, minerals and fibers. These nutrients need your body to stay strong and healthy and to ward off against diseases. Remember if you buy broccoli to watch the color, buy the broccoli as dark green as possible. In broccoli there is also a lot of beta carotene.

White 

The difference between green and white asparagus is that the green variant grows above the ground, which makes for the color. The white asparagus grows under the ground and remains beautiful white. Also the white asparagus is sweeter and softer than the green. Chicory has a white color because it grows in the dark like the white asparagus, but unlike the white asparagus, chicory colorizes green when it comes to light. That's why you can keep the chicory as dark as possible, because green makes it bitter!

Red

The red color of tomatoes comes through the lycopene fabric. And is the red pepper your favorite? Then you're lucky, in this paprika is most vitamin C, even three times more than in an orange! 

Yellow

Yellow vegetables are becoming more and more popular. Probably because they give your plate a lot of color. For example, there is a growing demand for yellow bell pepper, also because it has a particularly fresh sweet taste. Do you see the yellow zucchini sometimes in the supermarket? This colorful vegetable tastes exactly the same as the green zucchini and the only difference is in the color!

Nutritional content aside, did you know the 'Carrots are good for the eyes' is a myth that Britain pushed during WWII to hide the fact that they created radar?


The British Royal Air Force wove a fabricated tale about skilled fighter pilot John “Cats’ Eyes” Cunningham, saying that he attributed his excellent night vision to a steady diet of carrots. Soon, it was mandated that everyone should eat carrots so they could see better during the mandatory blackouts, but this was mere propaganda. The Royal Air Force was actually utilizing radar to locate German bombers before they reached the English Channel (Source: How Stuff Works).
