I want to share this Tres Leches de Chocolate Cake that I made to share with my family. They wanted a different cake and to vary them I dared to make it with chocolate and it was a great idea. The result was a moist, rich and absolutely fantastic chocolate cake ,,,
Bon Appetite
Ingredients
For the sponge cake
2 1/2 cups of rising wheat flour
2 cups of sugar
1 cup chocolate
8 large eggs
1/2 teaspoon vanilla
1 dram of liquor (brandy or rum)
res Leches sauce
1 can of condensed milk
1 can of evaporated milk
1 cup of milk cream
½ teaspoon vanilla extract
Cover
4 egg whites
3/4 cup of sugar
1/2 teaspoon vanilla extract
reparation
Preheat the oven to 350 ° F.
Prepare a baking dish with butter and flour.
To make the cake:
In a large bowl beat the egg whites with an electric mixer at high speed for 2 minutes, then add the yellow ones one at a time so that it is well mixed. Reduce the speed to low. Add the flour, and mix for 2 more minutes, then add the chocolate cup previously melted in bain marie, add the liqueur and vanilla whisks bat two minutes and then pour the mixture into the baking pan and bake for 35 minutes or until a toothpick inserted in the middle comes out clean. Remove the sponge cake from the oven and with a fork make holes in the whole top of it. Let cool for 10 to 15 minutes.
When the cake is cooling, make the three milks sauce: mix the condensed milk, the evaporated milk, the cream of milk and the extract of vanilla in a bowl.
Pour the sauce of 3 milks on the cake until everything is absorbed. Refrigerate for at least 3 hours or overnight.
For the glaze, in a small saucepan mix the water and sugar, over medium heat, stirring constantly for 5 minutes. Reserve. Beat the egg whites until hard peaks form. While stirring the egg whites, add the sugar syrup and continue whisking for 5 more minutes. Add the vanilla extract and beat 1 minute more. Spread the frosting over the cake.
Turn on the broiler for your oven and place the upper rack in the middle.
Cover the cake with meringue. Bake for 2 minutes; or until the meringue browns slightly. In this step you have to be careful because the meringue can burn very quickly. To avoid accidents I do it with the oven door open.
