You Won't Believe it's Not Magic! Double Chocolate Mousse (Avocado) Cake! 🥑🥑🥑🎂🎂🎂

in #food7 years ago (edited)

Did you know you could turn an avocado into a mind-blowing, creamy chocolate mousse cake?

Turns out it's not sorcery. It's real. (That or I'm a witch.)

I had no idea of this magic until a couple of days ago when my avocados were toying with my emotions.

I knew they wouldn't make it another night you know how avocados have a 3 second window between perfect and expired… well, this was happening, I could see it with my own eyes but it was late and I was feeling more on the sweet side of the story so instead of whipping up some guac like I normally would, I opened the little green wonders and I asked them if they liked chocolate.

Spoil alert: They said yes!

I swear I'm committing a vegan/plant based sin...

I really feel like being vegan comes hand in hand with having this insatiable love affair with avocados but to tell you the truth I don't even really like avos. I mean I like them in stuff, when the other stuff they're mixed with takes them over. I like when they're like a third wheel, hanging out there awkwardly being all like, "hey, I'm here too you know..." but no one really cares. I like to be able to ignore it if I want to, tune in when I'm interested, and focus meshing my face with the one I’m actually there for. ;)

Let's just say my relationship with avos was complicated!

It's gettin' HOT in here! 🔥 🔥 🔥

I live in Bali, which is a tiny tropical island that's in Indonesia. It's HOT here and so, the culture doesn't really use ovens! (Can you imagine? I’m looking at you North America!)

For the last year of my life I have been upping my raw game and while I have surpassed my greatest dreams for what I could create, sometimes I found myself secretly crying myself to sleep wishing for the day a warm cake or cookie that was within my dietary range would come into my life.

Well, I'm a go-getter so I finally figured out a solution and bought the biggest toaster oven I have ever seen. I'm telling you this because I cooked this in a toaster oven, not a conventional oven so I can't guarantee if it would be the same heat or cooking time!

So, you know I love a challenge right?

I literally had no idea what I was doing so we have to piece match some photos with some direction from when I went rogue and didn't document what was happening!

I genuinely didn’t think this was going to turn out. I thought I was wasting the avocados! Man, was I wrong and I am so happy for that!

The outcome of this actually blew me away! I'm super confident in my abilities and knowledge when it comes to the kitchen front, but guys, AVOCADO and CHOCOLATE? I just wasn't sure....

I'm obsessed with making good-for-you food that is delicious at the same time!

I believe food is one of the fundamental keys to our health. I think that what we put in our bodies has a lot to do with how the function and what goes wrong or right within them. That's why I love to make recipes like this that harness the healing power of natural foods but still give you the satisfaction you deserve in a meal! ;)

Hopefully you'll give some of my mouth-watering concoctions a try and feel amazing eating these guilt free goodies too!

Don’t believe me, just watch! ;)

What you need:

Double Chocolate Mousse Avocado Cake (vegan, gluten-free)
I know normally I am a lot more photo-showy about this but forgive me this time and follow along as I add things whenever I feel inspired!

choco25.jpg

Cake (2 layers)
Disclaimer: I started off making one layer then remade the same layer to add a double decker effect!

  • 1 and 1/2, soft avocados
  • 2 cups raw cacao powder
  • 1 1/4 cups coconut oil
  • 1 cup maple syrup (or sweetener of choice) ADD MORE IF YOU HAVE A SWEET TOOTH!
  • 1 ¼ cup coconut flour
  • 1 tsp vanilla extract
  • 6 chia eggs
  • 1.5 tbs sea salt
  • 1 tsp baking soda
  • 1 tsp baking powder

Chocolate Fudge Icing

  • 1 and 1/2 soft avocado
  • 1/2 cup raw cacao powder
  • ½ cup maple syrup
  • 1 tsp all spice
  • 1 tsp sea salt
  • 1/2 vanilla bean
  • 1/2 cup chocolate chips (I make my own using coconut oil, cacao powder, maple syrup and sea salt but if you are using store bought make sure to check the ingredients- they can contain a lot of nasty stuff!)

What to do:

choco24.jpg

Cake:

  • Start by mixing the raw cacao, coconut oil, sea salt and maple syrup together in a big bowl.
  • Mix this part until it becomes a thick liquid. Add sweetener as needed followed by cacao powder to thicken!

choco22.jpg

  • Cut the avos in halves and pulse 3 of the halves in a food processor (you want 1 and a half avo.)

avo.jpg

  • Add the avocado cream to the bowl with the chocolate and mix well.

choco20.jpg

  • Stir in the coconut flour and chia eggs, and vanilla and baking soda + powder, mix thoroughly! get your workout in…. or just throw it in the food processor! ;)

choco19.jpg

  • Check your mixture, depending on your sweetener it can be more “liquidy’ than mine so ensure it's a thick batter like the photos shown.
  • *If yours is more liquid, add 1 tbs of coconut flour at a time until you get desired consistency!

  • Set aside for now.

Chocolate Fudge Icing

choco18.jpg

  • Whip up the other 3 halves of the avocados with the cacao powder, maple syrup, sea salt, all spice and vanilla in a food processor!

choco16.jpg

  • Blend it all together until it whips up into a whipped frosting consistency.

choco15.jpg

  • Line a cake pan with coconut oil.
  • Pour half of the cake mix in and spread out evenly.
  • Pour half of the icing on top of the cake and spread it out.
  • One more layer of cake using the rest of the batter and spreading evenly again.
  • Finish off the icing you haven't eaten yet on top of the batter.
  • Sprinkle with chocolate chunks.
  • Put in oven for 30 minutes on 190'C.

choco14.jpg

  • Using the toothpick trick, when the toothpick comes out dry, you're good to go and take the cake out of the oven. Let cool before serving.

Now that your masterpiece is ready, PUT IN THE FRIDGE FOR MOUSSE! or eat right away for melting lava.

Looks moist and chocolaty

It sure is! The avo really gives it a creaminess that's nothing short of delicious :)

Yay! SO happy to hear this cake has been chosen :) Thanks AJ <3 I really would love more people to get to try this healthy dessert :)

Someone else posted too a recipe witch included avocado and chocolate and I found it very interesting! I love them both but it´s hard to believe that is possible to mix them. But your photos and recipe looks very good so maybe I just have to try making it!

Hahaha oh I know the feeling. I wasn't so sure myself except I was really banking on the avo being overtaken by the chocolate (which it was!) The one thing I'll say is that as a friend of mine mentioned when working with avocados, it can be a little bit more savory than sweet which is why maple syrup is needed. I poured some on my slice too ;)

Wooowoo

delicious!

I think you are a genius! It made me so hungry just reading your post I'm now going to have to eat lunch! lol Seriously I am really impressed. I'll have to up my exercise game if I keep eating your amazing creations! Well done! Resteemed!

Hahaha well, part of my health regime is activity/work out every day though, all of my ingredients are as good for me as possible so I really believe it's totally guiltless to eat as many of them as I want! ;)

As you can tell, I have a constant supply on hand and am still fit and healthy ;) Don't worry! <3

Thank you for the loving encouragement! I've been really inspired lately so there is so much more to come and not enough time for me to get it all up here ;) <3

Nice work on the post! Looks fantastic and thanks a lot for sharing this, as a vegan it can be tricky to find new recipes in the desert section :)

Recently did a mandarin cake with almond flour and chia egg mix and mandarin syrup, but this looks like a next level desert ;)

Peace

Hey @clausewitz I can imagine! Desserts are my thing ;) I shop at the local organic market for my creations and I like to know what's in my food so I make almost everything myself :) If you want some inspiration you should hang around here, I am constantly making desserts, it's non stop haha

That sounds really good! See almond flour is something that I wouldn't have around here or if I found it, it'd be super expensive so when I really want it I have to make it from my nuts lol but I love it so, it's all fun =D Hope my blog is able to satisfy some cravings for you =D

I see that, some beautiful crafting going on : )

I sure will stick around, there are so much vegan alternatives I am just getting acquainted to, desserts, mozzarella, and what not :P

Yeah it costs a lot :/ almost to much, but what to do right, grounding some low price almonds might save a buck but still sooo expensive.

Thanks for you kind response :) Looking forward to more deliciousness!
Peace

Oh my God. I love, I breathe avocado is so rich and more with a good arepa but, integrate it in this way to a healthy recipe? I had no idea, and it looks really delicious. Over here you won a new follower and fan. 😍🌻

Awww an avocado lover you say? Well you will LOVE this, I promise you that =D

I love making healthy food with plants and organic ingredients, I hope you enjoy them! It's avocado season right now so I am going to keep making new recipes using it ;)

Making a chocolate cake with avocado in a toaster oven is definitely original. Thumbs up!

Hahaha that's what I do here, always trying to think outside of the box ;) Fun little note, my toaster oven is also outside LOL!

oh haha great. baking outside must be good. :)!

I love your recipe so much, so I included it to my 5 favorite vegan Steemit recipes of the week here:
