Delicious Coconut and Date Scones That Happen To Be Vegan Friendly :O

Ok everyone I thought I would share my personal recipe for these delicious vegan Scones, but they are not one of those the 'original taste better recipes ' by just using coconut oil and coconut milk creates vegan deliocus, filling scone that u can cut in half and a jam they are easy to make and every bit as good if not better than "normal" scones. Have a read and test them out quick and simple healthy snack for you and the kids.

INGREDIENTS Makes 6
250g spelt + a little extra to help shape the scones
50g coconut oil + a little extra for greasing
30g coconut sugar (can use any other sugar)
½ tsp baking powder
¼ tsp salt
140ml coconut milk
8 Medjool dates

METHOD

Pre-heat the oven to 220ºC/200ºC fan.

Lightly grease a baking tray with coconut oil .
Put Spelt flour into a large bowl.

Add the coconut oil and mix the oil into the flour until it look like breadcrumbs.

Add coconut sugar ,baking powder ,salt and mix well to ensure they are distributed even.

Add coconut milk but keep a tablespoon or two back to help bring the mixture together at the end). With as little action as possible, mix the coconut milk into the other ingredients until it comes together in a ball of dough.
any stray bits of flour at the bottom of the bowl, add the coconut milk you kept back to help collect them.

Lightly flour a work surface, then lay out the dough and pat it flat to a thickness of about 1½ inches (don’t use a rolling pin). Either form it into a circle and use a sharp knife to divide it into 6, or if you prefer round scones, use a cutter to cut out your scones. Place them onto the prepared baking tray.
