Super easy and tasty ribs with potatoes and carrots
Namaste, everyone. I figured out one of the best spice combinations ever :) It goes well with potatoes and any red meat: bay leaf, black pepper, allspice and garlic. My husband loved it.
For vegetarians and vegans I have veganized the recipe. You can find it on my blog as well.
INGREDIENTS:
- 500 g red meat in one piece (I used organically grown free ranch lamb from a small local producer we trust. We don´t support any big meat production companies.)
- 400 g carrots
- 1 kg potatoes
- 2 medium sized onions
- 2 gloves of garlic
- 400 g chopped canned tomatoes
- 1 table spoon (or 1 tea spoon, in case you don't like your food spicy) of freshly ground black pepper
- 4-5 bay leafes
- 15-20 pieces of allspice (pimenta)
- 3 table spoons of olive oil (I have used organic, cold pressed olive oil)
- 1 l water
- fresh herbs for garnish
INSTRUCTIONS:
Roast the meat in olive oil on one side for about 1-2 minutes, turn it on the other side and add chopped onions.
Let the onions get a little color for about 2 minutes and add finely chopped garlic. Roast for about 1 munute.
Add roughly chopped carrots and roast for another 2-3 minutes.
Add chopped tomatoes and spices. Roast for about 2 minutes.
Add water and potatoes.
Let the water boil, put it on slow heat, cover your pot and let the stew simmer for 2 hours.
Garnish with freshly cut herbs (I used dill and chives) and serve.
