Today is another day in The GOE and thus another feast!



Tonight, we had one of our new beautiful chefs on the rocket stove for hours frying up hand cut Texas sized french fries!

They take a long time, but they sure are good and one thing people have when living in Freedom is time to do things the RIGHT WAY!



The key to a good french fry is high quality oil at VERY high temperatures. Also when you cut them, soak them in water (ideally ice water) and strain them right before cooking!

To make them Über Dank, we made up special dipping sauces like chile cream!



Of course everything is cooked on our handmade earthen rocket stoves fueled by salvaged trash wood in our outdoor kitchen. Yet to make them even MORE sustainable, we are cooking them in coconut oil which we saved from the dumpsters by the gallon due to product testing, where they open and test containers and then get rid of them afterwords. Thankfully, we had a connection on the inside so they went to use and not the trash!



We have the grill grilling, the rocket stove frying, and the oven baking!

And double-frying - after the first couple of minutes in the oil take them out & shake them dry (you have a frying basket?), let air get at them for 20-30 seconds, then dump them back in to finish. The added oxygen on the outside of the fries will make them turn golden-brown and crunchy outside.

The bowl contents remind me of plain hummus, a favourite of mine & very easy to make. Can dip anything in it, and use it as a spread on whatever you like, such as veggie burgers.

Thanks for sharing, this looks delicious and relaxing. I've been fortunate enough to have similar living experiences, albeit briefly, and too long ago.

Never tried that before. Don't have a frying basket but do have colliders. Make do with what is available!

I never imagined that I could get two secret recipes of cooking good french fries. Is there any special way you would like to recommend to make oil hotter in normal kitchen? I use common gas stoves.

Turn the knob higher. You don't need like 1000 degrees or anything insane, just something around 350 degrees F.

Vegetable oils have a lower flash point than olive oils, canola/rapeseed are much better and healthier than partially hydrogenated oils such as soybean, cottonseed or corn. Canola oil is also an unsaturated fat that’s high in omega-3 fatty acids. There are claims that when canola oil is heated above 120°F some of the fatty acids turn to trans fats.

Just watch that lower flash point, it'll smoke and catch fire more easily than other oils at high temperatures.

And spend more time in the gardenofeden for exposure to simple ways to enjoy life, simply.

Went to your website. I love the movement and what you guys are doing. When I have some courage, I will keep this place in mind for my journey. I have 2 little girls so it takes courage to kind of walk that "my own path" with circumstances being the way they are. I LOVE what I saw on that website though...My ideal of what has to change with this world.

Chile Cream sounds sooo good! I love a good dip for my fries. Never ketchup !

I often make a mayo + oil and lemon based- super secret family recipe salad dressing combo that does the job.

Fries are weak without sauce. Yours sounds like a dank little recipe! We usually mix up whatever's on hand to make something incredible. @everlove is a sauce master!

Indeed, unless they are the "perfect," cristpy on the outside & soft on the inside fries with a bit of salt & pepper on em mmm, otherwise sauce makes them infinitely better.

Checked out @everlove... I mainly saw visual art stuff and lots of re-steems lol. Maybe there's no sauce blog posts yet ;)

Wow I love your Earthen Oven. I made one too. I have it out at the property. I cook baked beans and bread in it. I was not aware you should soak your fries first before putting in the oil. Thanks for sharing 534.jpg

Cool, your oven looks great! Does it stay on that tabletop? It's so fun to build useful stuff out of dirt. Soaking the fries makes them a really great texture, and they don't soak up too much oil before they have a chance to get crispy. High heat is important too!
