Spicy Chicken Cashews + Mango Shake
In every great food there's a story, I went to Thailand twice back 6-7 years ago and we went to a restaurant it doesn't really look fancy, so you won't really expect something amazing, so we ask what's their best dish and they give us this spicy chicken cashew, so amazing,!!! Thought that maybe you want to feel like your in Thailand with in your backyard ;-)
Ingredients
1/2 teaspoon sesame oil
1 cup whole roasted, unsalted cashews
4 boneless, skinless chicken thighs, cut into cubes/stripes
extra flour for dusting
Kosher salt and freshly ground black pepper
Sauce:
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 tablespoon oyster sauce
1/2 cup low-sodium soy sauce
3 tablespoons chopped fresh ginger (divide it)
3 tablespoons vegetable oil
2 cloves garlic, minced
2 scallions, thinly sliced
1 red bell pepper, cut into small cubes
1 teaspoon crushed red pepper flakes
1/3 cup water chestnuts, chopped
4 tablespoons cold water
2 tablespoons cornstarch
Procedure:
Prepare the sauce
Heat sesame oil and add cashews until golden brown and set aside
Sprinkle salt & pepper on chicken dust it with some flour through it in the pan, you can use the same pan or what ever you prepare you can use the extra veg oil stir fry until pink color is gone or to your liking then set aside
Saute garlic, scallions, bell pepper, and red pepper flakes
and water chestnuts, throw in the chicken, then the sauce and let it simmer , mix water and cornstarch last but not the least the cashew
Serve it with steamy rice or pasta
Mango shake will be great;-)
Hint: if you want some twist your free to add more vegetables like broccoli, baby corn, pea pad to give it a crunch,
