Vegan Maple Banana Cinnamon Rolls Recipe - No Sugar Added - The Vegan Pastry Chef

Vegan Maple Banana Cinnamon Rolls
Ingredients
Dough:
1 cup warm unsweetened coconut milk
1 1/2 tbsp dry active yeast 2 mash bananas, overripe + 1 tsp banana extract (optional)
1 tsp sea salt 1 lb. 2 oz All purpose flour
2 tbsp agave or maple syrup
Filling:
4 mash bananas
2 tsp cinnamon
10 oz pitted dates
1/2 cup water
2 tsp banana extract
1 cup toasted pecans or walnuts (optional)
Filling:
Start Soaking dates in a 1 cup of water before you start the dough. In a blender, add the dates and 1/2 water until it forms a paste. Add the dates to the mashed bananas and the remaining ingredients. Mix until combined.
Directions:
Preheat oven to 375F
- In a bowl, whisk together the non dairy milk and yeast, until it's dissolved.
- Add the agave syrup and mix until combined.
- Add about 1 cup of flour, mix until combined. Add the banana and salt.
- Add the remaining flour and mix until it forms a sticky dough.
- Flour your table with AP flour and starting kneading you dough for about 2-5 minutes.
- Place in a greased bowl and cover with plastic wrap for 1 hour or until it doubles in size.
- Take the dough out and flour your table again. Roll out your dough into a larger rectangle (about 1/4"-1/2" thick)
- Smooth the filling evenly and sprinkle toasted pecans(optional); roll the dough longways.
- Take a unscented dental floss (see video) and cut the your cinnamon rolls about 2" thick. Or you can use a knife which ever you prefer.
- Let it proof on a parchment lined baking sheet (sit for 15-20 minutes) until it doubles in size and bake them for 20-30 minutes or until golden brown.
Drizzle pure maple Syrup! Enjoy!
