Moroccan Chicken Tagine with green olives
A delicious chicken tajine, a Moroccan recipe that we often prepare in Morocco. A Tajine easy and quick to prepare. I invite you to travel with me and prepare this delicious dish which you'll fall in love with !!!!
Ingredients :
- 1 Chicken (3 lbs)
- 1 minced onion
- garlic minced: 2 cloves
- fermented salted butter (or butter): 1 tsp
- salt : 1 tsp
- ginger: 1 tsp
- pepper
- turmeric: 1 tsp
- safran
- lemon juice : 2 tbsp
- olive oil : 3 tbsp
- vegetable oil : 2 tbsp
- water : 5 oz
- 1/4 candied lemon
- green olives
Preparation:
Cut the chicken into 4 quarters. In a bowl, mix the spices with the garlic, lemon juice, and fermented butter (or S’men). Marinate the chicken in this preparation for at least 30 minutes. In a large pot on low heat, brown the chopped onion in the oil for 5 minutes. Add in the chicken with its marinate, and brown it on all sides.
Wet the chicken with a bit of water and let it cook for 15 minutes. Pit the olives and detail the candied lemon peel into fine strips. Add in the olives and candied lemon peels with the chicken, cover, and let simmer until the chicken is cooked and the sauce reduced. In a serving dish, set the chicken quarters, garnish them with the olives and lemon peels, and coat in sauce. Serve hot.
