Goat Caldereta
Have you tried eaten a goat meat? Well on some countries they only raise goats for their milk. Here in the Philippines we're not just getting their milk but also their meat. Let me tell you how to cook this delicious recipe. I've learned this way of cooking from friend who use to buy and sell goats before.
Preparing goat meat requires extra effort and procedure compared to beef and pork. The best practice to eliminate the odor and gamy flavor is to marinate the meat on vinegar, salt, and ground black pepper mixture for 1 to 2 hours.
Here are the ingredients:
1 kilo goat meat (chevon) cut into cubes
2 pieces onions minced
3 pieces medium sized tomatoes, diced
6 tablespoon liver spread
½ teaspoon of chili (labuyo)
1 cup tomato sauce
3 pieces bell peppers, sliced
½ cup vinegar
1 piece large carrot cut into cubes
1 piece medium-sized potato cut into cubes
3 tablespoons cooking oil
2 cups water
Salt and pepper to taste
Here are the instructions:
1 Combine the goat meat, vinegar, salt, and ground black pepper for 1 to 2 hours
to eliminate the bad odor
2 Pour the cooking oil in a cooking pot
3 Saute the garlic, onion, and tomatoes
4 Add the marinated goat meat then cook for 15 to 30 minutes or if the meat turns brown in color
5 Add 2 cups of water and cook for another 5 to 8 minutes
6 Add the potatoes and carrots and cook for another 10 minutes
7 Add the olives and bell pepper then simmer for another 5 minutes
8 Add salt and pepper to taste
9 Serve while hot and enjoy!

I've tried a goat curry before, but it was almost all fat and bones and was very chewy. Is goat normally like this, or did i just get a bad cook? (I wonder?)
Yes it has a lot of bones and being chewy is also normal. If you wanted a softer meat you need to boil it in a longer time but it will loose a lot of sauce so you need to add more water.

What happened to the liver spread (is that liver pate)? it's not in the instructions.
haha!I'm sorry! It should be included on instruction #6. Liver spread should be added together with the potatoes. Thanks for reminding anyway! :-)
