Recipe: French Onion Soup
This easy recipe uses both red and white onions creating an absolutely delicious taste which spices up the classic recipe! Believe me, it won’t leave you disappointed!
You will need:
2 Bay leaves
2 Garlic cloves
3 large red onions
3 large red onions
1/2 tsp Black pepper
1 tsp Sugar
4 tbsp Olive oil
some French bread or Croutons
2 tbs Butter
1/3 cup of Soy sauce
some cheese that melts well
1/2 cup of dry white Wine
8 cups (1.8) litres of vegetable stock
Instructions:
Peel and slice the onions in half length-ways. Place each half flat side down and cut into strips.
Heat the butter and olive oil on a medium heat until the butter has melted. Then, add the onions, stir to coat and then cover and let cook for 10 minutes. The heat should be low enough that the onions do not brown but just begin to get soft. After the first 10 minutes, increase the heat to medium, add the sugar and stir the onions once every 10 minutes. Repeat stirring until 1 hour has passed and the onions are brown and caramelized. They will start to caramelize after 45-50 minutes.
Add the minced garlic, white wine, soy sauce, salt and pepper to the onions and let cook for a couple of minutes. Then add the vegetable stock and bay leaves, reduce the heat to low and let simmer for 1 hour.
Preheat the oven to 175 degrees Celsius (350 Fahrenheit). Spoon the soup into bowls, top with a slice of french bread or some croutons and then cover the entire dish with some cheese. Place it in the oven for 20 minutes before switching it to grill for the last couple of minutes to let the cheese turn golden brown.
Serve immediately.
