Best Flapjack recipe ever!
This recipe is awesome, not too sweet. You can have it as is or add Choc chips. This morning I added Choc chips, served with ice cream and Cape Honey. Perfect end to a long weekend. Hope you guys enjoy it as much as we did.
YOU WILL NEED
3 Cups all-purpose flour
4 Tablespoons sugar
2 Tablespoons baking powder
1 1/2 teaspoon kosher salt
2 1/2 cups milk
2 large eggs
8 tablespoons butter, melted, plus more for cooking
1 Tablespoon vanilla extract
DIRECTIONS
MAKE BATTER
Sift flour, sugar, baking powder and the salt in bowl, mix together.
Warm milk slightly in the microwave or on the stove top, just warm enough to keep your finger in without burning.
Whisk milk, egg, melted butter and the vanilla extract until combined. (Warming the milk helps the butter mix in properly and not have any lumps)
COOK PANCAKES
Heat a large pan over medium heat.
The pan is ready if when you splatter a little water onto the pan surface, the water dances around the pan and eventually evaporates.
Make a well in the center of the flour mixture, pour milk mixture into the well and use a fork to stir until you no longer see clumps of flour. It's important not to over-mix the batter.
Lightly brush pan with melted butter. Use a 1/4-cup measuring cup to spoon batter onto the pan, I have a small soup ladle that I use.
Gently spread the batter into your desired sized circle/s.
When edges look dry and bubbles start to appear and pop on the top surfaces of the flapjack, turn over.
This takes about 2 minutes.
Once flipped, cook another 1 to 2 minutes or until lightly browned and cooked in the middle.
Serve immediately with toppings of your choice. Ice cream and honey are the preference in our house, but berries, syrup and even just butter work really well
