                                                                               PROCESS:

Pour the vegetable bottom and add the pineapple, sugar and finally the prunes and dried apricots. Reduce to the point mijoter until sauce consistency. Rectify the seasoning and season with a black pepper
  3. Mise en place, Peel the yucca, wash it and cut it into cubes of 2x2 cm. Bring the yucca to the bottom of vegetables and cook until tender. 20 minutes, drain in a puree to mix with sweet pepper, cilantro, cumin and grated hard cheese, make balls of 3 cm in diameter and fry in deep frying at 180 ° C until golden brown, drain off excess oil and salt and pepper.
