Crunchy toasted quinoa with plenty of fresh vegetables and a creamy peanut sesame sauce makes this vegan salad delicious and fun to eat.

If you are a quinoa lover just like me and never toasted it before you are missing out. Though quinoa already has a delicious nutty flavor, toasting it only makes it better and adds some extra crunch.

Perfect lunch or dinner salad. Are you ready for it?

Ingredients (serves 2-3)

For the dressing

1 tbsp peanut butter (we used homemade)
1 tbsp sesame oil
1/2 lime, juice only
1 tbsp soy sauce
Black pepper to taste
Water if needed

For the salad

3/4-1 cup uncooked quinoa, we used tricolor
2-3 cups arugula or rocket lettuce
2 cups shredded red cabbage
1/4 cup finely chopped spring onions
1 cup finely chopped celery
1 cup cubed cucumber

Directions

  1. Cook the quinoa according to the instructions on the package.
  2. Combine all dressing ingredients in a small bowl. Whisk well to combine. Use water to thin if needed. We used homemade peanut butter which isn't as gooey as the store bought so we added a little water.
  3. Combine all salad ingredients, except quinoa, in a large bowl. Toss to combine.
  4. heat cooking oil in a skillet or wok. Toast quinoa until fragrant and slightly browned. Allow to cool slightly and add to the veggie mix. Toss to combine and divide over bowls or plates. Drizzle with peanut dressing.

You know? the pics of your recipe are very good, I've been wanting to be a food blogger or health blogger, but I cannot make up my mind yet

Just do both. They fit well together ;) Thanks for your compliment!

This looks so good. I was just reading that you should soak quinoa before cooking it. There is a soapy coating on the quinoa that blocks the absorption of nutrients from the quinoa. I tried it and sure enough the water was all soapy. Have you ever tried that?

I never soak it but rinse it a few times to remove the saponins or soapy substance. Never had any issues so far but will try the soaking after rinsing and see if there is still some left. Thanks for the tip @chefsteve. Soaking will also initiate fermenting which will make the grains more digestible. How long did you soak them?

Yes, please! I am a huge fan of salads with peanut dressing! 😁

Then you will like this one. Thanks for stopping by!
