RAW VEGAN CHOCOLATE TRUFFLES
These simple little raw chocolate truffles taste just like the real thing. I’ve shared these with family and friends and the verdict is they are to die for!
So roll up your sleeves and get ready to impress with these delicious truffles that no one will believe are raw and actually not completely terrible for you compared to most unless of course you become addicted-which might not be hard to do!
All in all, if you are going to enjoy some chocolate, you are better off with raw chocolate that is homemade for at least it has the benefit of antioxidants and better sweeteners.
Keeps in the fridge for up to 5 days (if you can resist them that long). Keep in a freezer bag in the freezer up to a month, defrost at room temp before eating.
Ingredients
400 gr or 2 cups of soft dates, pitted
2-3 tbsp of raw cacao or carob powder + additional for coating
2 tbs of coconut oil melted
2 tbsp of maple syrup
Orange zest
1 tsp of almond extract
1 handful of crushed walnuts
coconut shreds
goji berries
Directions
Step 1 : Blend your soft dates and cacao/carob powder in a high speed blender or food processor until you have a very smooth uniform consistency. Use your tamper or spatula to scrape the dough down until it's well combined as you blend. Add maple syrup and coconut oil if you like. Blend again.
Step 2: Divide the mixture into 4 bowls. Add orange zest into one, crushed walnuts and almond extract into second bowl, and goji berries into third one. Mix it all together.
Step3 : Wet or lightly coat your hands with coconut oil to make it easier to roll the chocolate truffles.
Step 4 : Scoop out mixture, roll into small balls and dip into cocoa or coconut shreds and repeat until all coated. Use your imagination and decorate the way you like.
Step 5 : Place truffles in the refrigerator or freezer for at least one hour to firm up. Store truffles in an air tight container.
If you are not using high-quality soft dates soak in warm water for at least an hour beforehand, pour out excess water and dry off dates very well.
