Ingredients
For the Crepe layers we will need:
2 cups milk - or 500 ml
3/4 cup water or 180 ml
4 eggs
6 Tablespoons butter, melted
6 Tablespoons sugar
Pinch of salt
2 cups flour - 300 gr
4-6 tbsp of cocoa powder
Raspberry Buttercream
1 cup or 250 gr of raspberries
Icing sugar ( for extra sweetness)
2 tbsp of raspberry jam
Double cream 300 ml OR 2 cups
1 pack of cream cheese full fat 250-300 gr OR 1 cup
1 can of condensed milk 240 gr OR 1 cup
raspberries to decorate ( optional)
dark chocolate 100 gr OR 1 cup ( to decorate, optional)
Directions
Step 1: In a large bowl, mix all your pancake ingredients and mix well until there are no lumps. Set aside.
Step 2: Whip your double cream until nice and fluffy.
Step 3 : In a different large bowl, add all the buttercream ingredients and gently fold in the whipped double cream. Add fresh or frozen raspberries. You can add more icing sugar if you like it sweeter.
Step 4: Once all mixed in, place the buttercream to set in a fridge while you fry your pancakes.
Step 5: Fry the pancakes one by one and let them cool completely. Make sure they are all the same size, you can either use a plate to cut them out or fry them in same pan.
Step 7 : I like to use a 9 inch / 23 cm cake tin to build my cake. Place the raspberry butter cream in between each pancake until all layers are done.
Step 8 : Melt some dark chocolate and pour all over the top pancake. Decorate with some raspberries. Be sure to refrigerate the cake for at least 1-2 hours or best overnight. Enjoy!

This looks absolutely delicious. I have tried making crepes before but never a crepe cake. I do have a question though. For the double cream in the list of ingredients, is that similar to light cream, heavy cream, or whipping cream?
Yummy
