Everyone Loves A Simple Sandwich :)
Hey friends!
Looking for something to make for lunch that's healthy, tasty, and fast?
Try my turkey sandwich recipe :)
Sound dumb? Well, yeah. It kinda is. It shouldn't even be called a "recipe" because it's so simple, but that's the beauty of it - and pretty much everyone likes some similar version of this, and it can easily be tweaked to fit your tastes and preferences without changing the calorie count too much.
If you try to tell me you don't have time to prep something like this before work in the morning, you've got some bigger issues - this takes less than 5 minutes to make! Get up 5 minutes earlier, that amount of sleep loss will not make a difference in the grand scheme of things. Stop with the excuses and make yourself the sandwich!
I've had clients tell me they just have no idea what to make for lunch at work - I always suggest that they return to the basics and keep it simple. Simple = sustainable! Complicated meal prep can be stressful and unnecessary for a lot of people, so don't make this "being healthy" thing harder than it needs to be!
Something this simple can be your go-to when you're low on extra minutes and culinary inspiration but still want to have something healthy, satisfying, and goal-friendly to take with you to work. Don't go to work? Even better! Make this at home right before you eat it, you lucky thing, you! :)
Having simple things like this in your healthy food arsenal can really help to keep you out of the drive-thru lane, away from the pizza in the break room, and help you pass on that bowl of Halloween candy... You can make this every day, varying the ingredients slightly to keep things interesting, and always have something to count on that fills you up with the good stuff!
This sandwich has plenty of protein, moderate carbs, some veggies, and some healthy fats - a solid, balanced, filling meal for the middle of your day that will give you energy and not make you feel like you need to sleep for 3 hours after lunch!
What you need:
- Two slices low-calorie bread, preferably toasted (I choose one that has 11g carbs per slice - there are a handful of options out there, read your labels!)
- Lean deli turkey
- Fresh ripe tomatoes
- Fresh lettuce or mixed greens
- Thinly sliced red onion, if desired
- 1 single serving cup of Wholly Guacamole
*If I have them on hand and I have the time, I really like to add sprouts, thinly sliced bell peppers and/or thin cucumber slices to this sandwich... I'm a fresh veggie fanatic, and I love the volume and flavor extra veggies add!
*You can substitute other lean deli meats, grilled chicken breast, or leftover lean meat (ex. steak) from the night before if desired.
If you're worried about your sandwich getting soggy, you can always slice up the ingredients, put them in a container alongside your guacamole cup, and take your bread separately - that way, you can assemble your masterpiece at lunch time right before you eat it :)
Lastly, bringing your own food is not only healthier, but also SO much more economical! Bringing yourself a huge, badass sandwich for lunch saves tons of money each week over going out - money you could be spending on other things, like your gym membership, massages, personal training, or any other type of investment in yourself :)
So guys, seriously... Keep it simple. Stick to what you know, what you like, and what's healthy. It's not super hard if you don't make it hard - it only takes a few minutes to make yourself a meal that will keep you on track, and it really is worth it!
What do you take with you to work for healthy lunches/snacks? :)
