Whey is a blend of globular proteins isolated from whey, the liquid material created as a byproduct of cheese production. This whey had traditionally been discarded in cheese making, but has a great value today, due to the lactose, minerals, and proteins it contains, as well as the functional properties it imparts to food in the food industry (foaming, solubility, and emulsification).
This whey protein is widely used by athletes, especially bodybuilders, it is one of the largest sources of protein of natural origin, and the most common ways to find it are as a concentrate and as an isolated. Concentrated whey protein contains between 40% -80% protein per gram, including a higher concentration of some amino acids (including immunoglobulins), than those found in isolated proteins. Whey proteins isolated (filtered), the most commonly used by athletes, contain between 90% -96% protein per gram, being obtained from the milk whey, generally by the producer to maintain its natural properties, one of which is to promote the stimulation of the immune system.
The biological components of whey demonstrate a range of beneficial health properties, such as boosting immunity. In addition, whey has the ability to act as an antioxidant, antihypertensive, antitumor, hypolipidemic, antiviral, antibacterial, and chelating agent. A number of successful clinical trials have been conducted using whey in the treatment of cancer, HIV, hepatitis B, cardiovascular disease, osteoporosis, and as an antimicrobial agent.
