The solution was using the Greymass Wallet. As it turns out, just like when you Power Down STEEM, you have to claim them before they are added back to your main wallet. simplEOS does not have this feature, though I suspect that it's going to be in their next update. Greymass Wallet has this feature, and I was able to recover the unstaked coins!
