Turkey Stew Recipe. This is a beautiful, rich tomato and turkey stew. A great healthy eating choice. This recipe serves two people. Turkey breast meat and fresh vegetables are cooked up into a hearty tomato stew that may be enjoyed any time of year. It is a very filling, delicious and affordable dish.

Ingredients

2 large turkey breasts
1 onion
2 cloves of garlic
1 bayleaf
1 tsp of tomato puree
1 can of chopped tomatoes
1 carrot
vegetable stock
peppercorns
cooking spray or 1tsp of olive oil
vegetables : green beans, asparagus & broccoli

Directions

Step 1 : Place your chopped onion and garlic in a pan with some cooking spray or olive oil. Cook for 5 min.
Step 2 : Add your chopped carrots, tomato puree, bayleaf and peppercorns.
Step 3 : Add chopped tomatoes, vegetable stock and cook for 20 min on low heat.
Step 4 : Prepare your vegetables, wash and cut them into bite size pieces. Chop up your turkey.
Step 5 : Add your turkey into the stew, and a little bit of water. Then add your vegetables. Cook for further 15 min.
Step 6 : Serve while hot and enjoy!

Turkey stew looks really tasty, but i may prefer chicken...

I am not a big fan of turkey because it's a little dry but I will definitely try this dish. Great presence looks extremely flavorful.

This is what I like... the kind of stew I can eat with a fork. :D
