Decentralized Cooking: Chicken Pot Pie

Hi Dlive.

Todays recipe is a full size meal that can feed a full family. Now I'll admit... it's not the easiest thing to make but it's possible!

Chicken Pot Pie

Crust
3 C flour
1 C unsalted butter, cut in small pieces
1 t salt
1 t baking powder
Ice water (about 7-8 T depending on your loction)

Filling
3 C cooked chicken breast shredded
½ C butter
Salt
Pepper
2 carrots
Onion
4 garlic
¾ C flour
3 C chicken broth
¼ C heavy cream
2 T chopped parsley
2 t thyme
Egg wash

Using a food processor, pulse flour, baking powder, and salt until combined. Add butter and pulse till pea size pieces form. Add ice water into feed tube, 1 tablespoon at a time, till dough just come together.
Split dough into 2 flat disk and chill 30 min in refrigerator.
Using a large stock pot over medium heat, melt butter, add onions and carrots and cook till veggies are soft and translucent. Add pressed garlic, then stir in flour and cook until the flour mixture is incorporated. Add chicken broth and whisk. Bring mixture to boil and let thicken. Add in heavy cream, chicken, parsley and thyme. Add salt and pepper to taste.
Next roll out one disk of dough about ¼ thick. Place in pie dish then add your filling mixture. Roll out second disc of dough about ¼” thick and place on top of filling mixture. Trim and crimp edges and cut holes in center. Brush with egg wash
Bake at 375 F for 45 mins and pie crust is golden. Let cool before serving.
