Recipe for Coconut and Chocolate Balls

Ingredients

• 200g of grated coconut.
• 200g of sugar.
• 120ml of water.
• 200g of chocolate for desserts. (depending on the brand you may have to pour 50g of butter, if it is too thick)
  
  

Preparation

1.- Mix the water and the sugar in a saucepan or any other container and bring it to a boil.

2.- When it has broken to boil, turn off the heat and add the grated coconut. We remove and integrate all the ingredients well and then cover it and wait until it has cooled. Then we put it in the refrigerator and leave it for two hours covered.

3.- After the time, the dough will be very compact and very malleable. We take a teaspoon of it and, with our hands, we give it a ball shape. It is similar to giving shape to croquettes. Then we serve on a plate and continue making little balls.

4.- When we have all done, we put them in the freezer, plate included. We leave them there for half an hour so they can be even more compact.

5.- After half an hour, melt the chocolate in a water bath. It can be done in the microwave also, but I personally prefer to do it in a bain-marie because the chocolate is brighter. If you see that the chocolate is very thick (will depend on brands) add a little butter but not too much or if not then the coconut balls will be undone very easily. Then, we put the balls one by one in the melted chocolate and smear them well with it. We remove the excess chocolate and place the coconut and chocolate balls on baking paper. This will make it easier to take them off once cooled. Finally let cool in the refrigerator, before consuming.
