\Chewy texture of biscuit can be given by brown sugar. Of course, it depends on how long baking time is. If you are a person who doesn't enjoy too sweet snacks then a brown sugar biscuit should be your favourite. It allows the baking soda to produce more carbon dioxide so more air goes through the batter and ultimately change its texture to be fluffier and softer. The sugar also let the batter you have made to set quicker than if you use white sugar because of its acidic content. You will also notice that your biscuit you've made with brown sugar will be much higher after cooke because the batter have more air inside it.

Brown sugar can also be used to complement other ingredients for different recipes. For example, using the sugar with nuts such, it will cover the hint of bitterness and adds a strong and delight flavour. This combination will be just amazing as imagine, you should try.

One thing that we should pay attention is how we store brown sugar since it's more moist that white sugar. If your sugar had dried out and somehow hardened, you can sprinkle it with a little drops of plain water and leave it in the microwave on low temperature for 10- 20 seconds. It will return your sugar to its normal texture state.
