Cooking pakbet with DJ! 😇

in #cooking7 years ago (edited)

Our family's all time favorite dish specially during our get together almost every week is pinakbet. ❤️ I look forward to this because all they serve in our office cafeteria is all meat.

Alright, so going back, pinakbet is made from mixed vegetables steamed in fish sauce.

So here are the ingredients:

  • 2 medium-length eggplants, cubed (im not sure if cubed is the right cut for this! 😂)
  • 1 medium-length bitter melon (ampalaya, i dont need to add this actually, since I'm already bitter! 😂), sliced
  • 6 tender okra pods (my favorite vegetable so we used too much! 😆)
  • 1 garlic clove, minced
  • 1/2 cup of sliced onions
  • 1/2 cup chopped tomatoes
  • 1 cup water from rinsing rice
  • Fish sauce (taste it so it won't be too salty)
  • 1 tbsp pounded ginger
  • 1 cup boiled sliced pork
  • 2 tbsp cooking oil

Here we go!

  1. In a pan, fry the boiled pork to brown. Set aside and we'll use it for later.

  2. In the same pan, stir-fry the garlic, onions, ginger and tomatoes. (Don't let em burn alright?)

  3. Add fish sauce, you can buy one in wet n' dry market near you.

  4. Add the pork and the stir-fried garlic, onion, ginger and tomatoes.

  5. Bring back to a boil, then add the ampalaya, eggplant and okra. (You'll see if the vegetables are already cooked)

  6. Cover the pan and cook over high heat, then turn down the heat to prevent scorching.

  7. Cook until the vegetables are done. Don’t overcook because the vegetables will lose their bright colors and maybe the protein it can give you.

** you can also add squash or string beans if you like. Whatever suits you! 😉

If you don’t have bagoong on hand, just use salt.

So there, as for us, we added fried pork chop with cold water on the side and a little chit chat. (Alright, too much chit chat!) hahahaha.

Just like what I said before, eating with your family is the best!

Ciao! 💋
