Crustless Quiche - 1 April 2025

I recently tried another recipe that uses cottage cheese. This crustless quiche did not use that many ingredients so I was able to make it quite easily without having to spend extra money.

The recipe really had a lot of protein sources : 5 eggs, over 200g of cottage cheese and also grated cheddar cheese. This is okay particularly because you can get six slices out of it so you don't need to eat it all at once. I accompanied mine with a salad but it would also be nice with few vegetables as a full meal.

Grating the hard cheese was made harder by the very small grater I had. I reduced the amount of cheese by 20g because of that. I don’t think that made a lot of difference to the final taste or consistency.

I put the 5 eggs, milk, spices and flour, and mustard in the food processor to blend well. I also added a bit of turmeric because I’ve heard it’s good for you. This didn’t add any flavour to the quiche but it did give it a nice colour. I will not use it next time to test whether or not it needs it.

As you can see below it’s only a small food processor so I was lucky that it didn’t overflow.

I poured the very liquid mixture onto the grated sweet potato, cheese, red pepper and spring onion.

In hindsight I wish I had added extra vegetables like broccoli or peas because the spring onions didn’t look very dark green. After 35 minutes or so the quiche was ready. Of course it collapsed a bit as it began to get cold which is always disappointing to me.

All in all the recipe worked very well. The quiche didn’t last very long so that’s a sign it tasted fine. I just wish there was a way of keeping the initial impressive size of the quiche before it collapses. The tutorial was very clear and although they use a skillet rather than a glass Pyrex dish as I did, it worked well and cooked well within the temperature and time specified. I have also seen other variations where people add bits of this or that so it’s quite a good recipe to have as part of my repertoire as I can add and take ingredients.
