I hate "Trolly problems" because none of them happen in real life.
Like you say, there is always alternatives.

Especially if you are somone who knows how to operate a train track switch.
And if you did, the correct solution may be to put the trolly on the ground. Which you can do if you have access to said switch, and knew about its positioning.

Further, the trolly problem is just there to break your mind.
Accepting the question puts your mind in a box that makes it harder to think from then on.

And hoarding all the coconuts?
Well, one of the best ways through this problem is to just let him die.
Because in order to monopolize all the coconuts, one would have to forgo all the other essentials.
