四川名菜 棒棒鸡

今天我给大家安利一道四川名菜———棒棒鸡。棒棒鸡始创于四川乐山一带,自从传入成都以后人们用棒鸡法轻轻拍松鸡肉让鸡肉更加入味,因此而得名。
棒棒鸡的特点是颜色鲜红,咸辣鲜香,入口即化,微带回甜。朋友们听到这儿估计已经垂涎欲滴了,别着急,接下来朋友们就跟我一起来做一下这道四川佳肴吧。
需要提前准备的食材有:
煮熟的鸡胸肉。调料有:芝麻酱,醋,酱油,味精,白糖,盐,辣椒油,鸡汤,香油,芝麻盐(注:有的朋友没有听过芝麻盐,其实芝麻盐就是把白芝麻放入平底锅中小炒至微黄色即用手一搓芝麻就碎的状态。再把炒熟的芝麻冷却后放到料理机里面加入适量的盐打成粉就是芝麻盐了。)
步骤1:
把鸡胸肉放在案板上,铺上一层保鲜膜,再用木棒把熟鸡肉拍松,拍完后用手顺着鸡肉的纤维撕,把所有的鸡肉撕成细条放入盘中。
步骤2:
取适量芝麻酱加鸡汤稀释,然后加味精和白糖若干搅匀。再加醋,酱油,香油,辣椒油和芝麻盐调成酱汁。
步骤3:
把调好的酱汁均匀浇在鸡肉上。做完后还可以撒上适量的葱花,芝麻和碎花生,能够增加菜的成色和香味,增加食欲。
