今天我突然覺得,在一個油水混合體系當中,如果水特別多,則溫度只能達到100攝氏度,所以水不會爆出來;如果油特別多,則水會一下子被氣化,也不會有液態的水爆出。為了驗證這點,我在油溫不太高的時候,炸了雞塊。只見細細密密的小泡泡不斷生成,雞塊像攪拌子一樣,成為了沸騰中心。所以,沒有爆。
