๐ฟ๐ Slow Cooker Basil Chicken Curry Recipe ๐ฒ
You don't have to sit and monitor the cooktop for this recipe. Dinner is ready in a matter of hours if you simply put everything in the slow cooker, and it will also fill your house with a wonderful aroma.
๐ฅ Ingredients
1 tbsp. ๐ง ghee
2 1/2 lbs ๐ bone-in, skin-on chicken thighs
2 (13.5 oz.) cans ๐ฅฅ coconut milk
2 tbsp. ๐ฟ dried basil leaves
1 tsp. ๐ง salt
1/2 tsp. โซ pepper
2 tbsp. ๐ถ๏ธ Thai red curry paste
1 tbsp. ๐ curry powder
1/2 tbsp. ๐ garam masala
1/2 tsp. ๐ถ๏ธ chili powder
2 cloves ๐ง garlic, minced
2 tsp. ๐ซ fresh ginger, grated
1 ๐ง
onion, chopped
2 ๐ถ๏ธ red bell peppers, chopped
2 tbsp. ๐ฟ fresh cilantro, chopped
๐ Cooked rice (optional)
๐ซ Naan bread (optional)
๐ Directions
Step 1:
In a large skillet over medium-high heat, add ๐ง ghee. Once hot, sear the ๐ chicken thighs on each side until golden brown. Set aside.
Step 2:
In a slow cooker, add ๐ฅฅ coconut milk, ๐ฟ basil, ๐ง salt, โซ pepper, ๐ถ๏ธ curry paste, ๐ curry powder, ๐ garam masala, ๐ถ๏ธ chili powder, ๐ง garlic, and ๐ซ ginger. Stir to combine, then add ๐ thighs, ๐ง
onion, and ๐ถ๏ธ bell peppers.
Step 3:
Cook on high for 4-5 hours or on low for 6-8 hours.
Step 4:
Remove ๐ chicken thighs from the slow cooker and place on a cutting board or plate. Remove the skin and discard. Shred the chicken, discarding bones, then place it back into the slow cooker.
Step 5:
Serve curry over ๐ rice with ๐ซ naan and top with ๐ฟ fresh cilantro. Refrigerate leftovers.
