You don't have to sit and monitor the cooktop for this recipe. Dinner is ready in a matter of hours if you simply put everything in the slow cooker, and it will also fill your house with a wonderful aroma.

๐Ÿฅ„ Ingredients
1 tbsp. ๐Ÿงˆ ghee
2 1/2 lbs ๐Ÿ” bone-in, skin-on chicken thighs
2 (13.5 oz.) cans ๐Ÿฅฅ coconut milk
2 tbsp. ๐ŸŒฟ dried basil leaves
1 tsp. ๐Ÿง‚ salt
1/2 tsp. โšซ pepper
2 tbsp. ๐ŸŒถ๏ธ Thai red curry paste
1 tbsp. ๐Ÿ› curry powder
1/2 tbsp. ๐ŸŒŸ garam masala
1/2 tsp. ๐ŸŒถ๏ธ chili powder
2 cloves ๐Ÿง„ garlic, minced
2 tsp. ๐Ÿซš fresh ginger, grated
1 ๐Ÿง… onion, chopped
2 ๐ŸŒถ๏ธ red bell peppers, chopped
2 tbsp. ๐ŸŒฟ fresh cilantro, chopped
๐Ÿš Cooked rice (optional)
๐Ÿซ“ Naan bread (optional)

๐Ÿ“– Directions
Step 1:
In a large skillet over medium-high heat, add ๐Ÿงˆ ghee. Once hot, sear the ๐Ÿ” chicken thighs on each side until golden brown. Set aside.

Step 2:
In a slow cooker, add ๐Ÿฅฅ coconut milk, ๐ŸŒฟ basil, ๐Ÿง‚ salt, โšซ pepper, ๐ŸŒถ๏ธ curry paste, ๐Ÿ› curry powder, ๐ŸŒŸ garam masala, ๐ŸŒถ๏ธ chili powder, ๐Ÿง„ garlic, and ๐Ÿซš ginger. Stir to combine, then add ๐Ÿ” thighs, ๐Ÿง… onion, and ๐ŸŒถ๏ธ bell peppers.

Step 3:
Cook on high for 4-5 hours or on low for 6-8 hours.

Step 4:
Remove ๐Ÿ” chicken thighs from the slow cooker and place on a cutting board or plate. Remove the skin and discard. Shred the chicken, discarding bones, then place it back into the slow cooker.
