Chicken dam biriyani
Chicken Dum Biryani is a flavorful and aromatic rice dish that originates from the Indian subcontinent. It is made using basmati rice, marinated chicken, and a blend of rich spices, cooked using the "Dum" method, where the ingredients are slow-cooked in a sealed pot to retain their flavors and aromas.
Ingredients:
Basmati rice
Chicken (marinated with yogurt, spices, and herbs)
Onions (fried until golden brown)
Tomatoes
Ginger-garlic paste
Green chilies
Whole spices (bay leaf, cinnamon, cardamom, cloves)
Powdered spices (turmeric, garam masala, red chili powder, coriander powder)
Fresh coriander and mint leaves
Ghee or oil
Saffron milk (for aroma and color)
Cooking Process:
- Marination: Chicken is marinated with yogurt, spices, and herbs to enhance its taste and tenderness.
- Cooking Rice: Basmati rice is parboiled with whole spices to infuse it with flavor.
- Layering: In a thick-bottomed pot, layers of chicken and partially cooked rice are arranged. Fried onions, saffron milk, and fresh herbs are added for extra taste.
- Dum Cooking: The pot is sealed with dough or a tight-fitting lid to trap steam, allowing the flavors to blend as the biryani slow-cooks over low heat.
- Serving: Once done, the biryani is gently mixed and served hot with raita (yogurt sauce) and salad.
