Olgun bir muz ile ham bir muz arasında bir takım farklar bulunmaktadır.

Ham olan muzun kabuğu su ile doludur.Kabuk dışarıdan içeriye su geçirmemesine rağmen muz olgunlaştığında sudaki ozmos ( geçişme ) sayesinde ağır ağır kabuktan meyvenin içine doğru nüfuz eder.

Bu durum muzun kabuğunu incelterek daha yumuşak olmasını sağlar ve kabuğun canlılığını yitirip dağınık bir görüntü sergilemesine yol açar.Bu devinim muhtemelen muzun olgunlaştığını ve meyvenin artık yenmek için hazır hale geldiğini gösteren bir uyum sürecidir.
