Tube-weaning Journey for Jansen: Daily Healthy Home-cooked Meal #3

This is Jansen with CDH, now is on his journey of tube-weaning, hence mummy becomes diligent to cook for him healthy home-cooked food.

Today, I prepared for Jansen and family steamed local sea bass, stir-fry pumpkin with minced meat and snow peas, and spinach soup with fishball and wolfberries. Dietician advised us to prepare as healthy as possible for Jansen, that is cooking with lesser salt and sugar, and not so much fried or processed food. This is very challenging considering everywhere there is processed and pre-manufactured food. Anyway, we will just try our best.

Steamed local sea bass with ginger, tomatoes and fish sauce

This is healthy and very easy to prepare. For the sauce, julienne an inch of ginger and few cloves garlic. Heat up wok with oil, and slightly golden the ginger and garlic for awhile. Transfer the ginger-garlic oil to a bowl and pour 2 tablespoon of fish sauce. Clean your fish and pat dry. Transfer fish to steamer plate and steam for 8-10 minutes. Drain off the water around the fish, pour in the ginger-garlic oil and continue steaming for 2 minutes. It is done!

Stir-fry pumpkin with snow peas and minced meat

Wash clean pumpkin, snow peas and meat. Cut the pumpkin and snow peas to the size you want. Stir fry 4-5 cloves of garlic until fragrant, then add in meat to stir fry for 3 minutes, followed by snow peas and pumpkin for another 3 minutes. Add in water to slightly cover half of the pumpkin, seasoned with some salt and pepper and 1 tablespoon of oyster sauce (optional). Simmer until pumpkin reaches the softness of your choice.

Red spinach soup with wolfberry and fishball

In a pot, heat up oil. Stir fry few cloves of garlic and a handful of anchovies until fragrant. Pour in water and continue to simmer for about 20 minutes to make to anchovies broth. Add in fish ball, wolfberries and spinach. Continue simmering for 3-5minutes and the soup is done. Add in salt or somemore anchovy's stock if you want it to be more tasty.

For Jansen, we let him eat the dishes with a ladle-scoop of rice with 1-2 teaspoon of marjarine to fatten him. This is a special direction from dietician because he needs more calorie than usual child due to his lungs and heart working harder.

Unfortunately, today Jansen was not keen of eating his rice. He just wanted the spinach soup and pumpkin. Well, mummy was a little bit sad but thinking of the journey he has gone thus far and he had just started eating 3 main meals a day by himself, I thought he had tried his best too. So I celebrated his success in eating his breakfast, lunch and dinner a by himself regardless of the amount he took. He still had a journey to go but as of now we could not be more grateful of his achievement.
