They are also probably assuming the same thing as last year will repeat and the opposite could also, like in 2013, and this could become a multi-year thing. In which case they definitely aren't gonna be able to donate their profits indefinitely...

I believe that the only fee they are donating to charity is the fee they charge to list a cryptocurrency on their exchange (which is enormous). They are not donating fees they collect for trading. Keep in mind, they are donating it to their own charitable foundation...which can mean it is nothing more than a calculated tax dodge. I would guess the money finds it's way back to Binance somehow.
