I had bread made from acorns up in Massachusetts years ago. One of the doctors I worked with did a lot of 'wild' food prep. Looked like whole wheat but had a nice semi-sweetness to it. And YES, the tannins will pucker you up if you don't wash it out. Guess turkeys like their food bitter or have lousy taste as they love acorns. Recently met some Natives in AZ (I think Apache) who were gathering acorns to make flour.
I look forward to trying acorn pancakes or bread. Just didn't want to see these beautiful nuts go to waste.
