Hope you all are having a lovely Sunday. Today, I would like to share my grandmother’s recipe of Makkai Pakka that I tried, with you all.
Just to give you a little background of Makkai Pakka, it is an East African dish of corn in coconut curry. The recipe if fairly simple, oil-free and the corn drenched in the curry is oh-so-yummy!
Let’s get into it, right away!
Ingredients
- Shucked corns (used 2 in my case) cut into 3 pieces
- 2 green chilies
- 1 coconut milk powder packet (50g)
- Turmeric powder (quarter tsp)
- Salt (as per taste)
- Lemon (as per taste)
Method
Step 1: First, boil the cut corns in a cooker.
Step 2: Next, we have to make the paste of coconut milk powder and water. The consistency is not very runny rather medium-thick.
Step 3: Add this paste in a wok and add turmeric powder (as per the mentioned quantity) and mix.
Step 4 Once it starts to boil, add green chilies and corn (as per the mentioned quantities) and keep adding the paste onto the corns so it can soak it.
Step 5: Leave the mixture in the wok for 5-6 minutes on medium-low flame. Once, it has reached consistency like a sauce, turn off the stove and salt as per taste. Now, it is ready to serve! You can add lemon to enhance its taste later, as per your choice!
