Recipe of the Day, Week No. 57: (Rice and Spicy Stew)

Hey chefs, it's yet another cooking contest again and I'm glad to be participating in it.
Today I'll be sharing a step by step procedure for a really nice recipe, rice and spicy stew.

Ingredients and Method of Preparation

Rice
Fresh tomatoes (8 or more)
Sachet or tin tomatoes(6 or depending on the quantity of stew to be made)
Fish or meat
Curry powder
Onions
Pepper
Seasoning cube
Vegetable oil

First wash the rice and cook it to be soft. You can add salt if you like. Some people do not add salt because they feel it helps the rice not to be sour but I do add salt and then store it well in the refrigerator. That helps it to remain fresh for hours.

Next, chop the fresh tomatoes into small pieces. I normally use just the tin tomatoes but today I decided to add fresh tomatoes and I think I will continue this way because the fresh tomatoes are a lot more healthy than the processed ones.

Next, chop the onions into long slices, unwrap the seasoning cubes and squeeze out the sachet tomatoes into a plate.

I added a little water to make it less thick.

Wash the fish or meat, season it and boil it When it is soft, remove it from the heat and empty the pot
Next, add the vegetable oil and when it is hot, fry the onions and fresh tomatoes then add the tomato puree, pepper and salt to taste.
After a few minutes, add the broth and meat inside and leave it for some minutes to boil so that everything melds together.

Once the stew is boiled well, serve it over the cooked rice. This meal is perfect for any occasion and the combination of fresh tomatoes makes it a healthy option.

Rice and stew are ready to be eaten.
