Recipe of the Day, Week 74: (Jollof rice)

Hello steemians. It's great to participate in this contest as a foodie and I just want to share an amazing recipe I prepared though not recently, still I couldn't let it just be and so I decided to share it here for all my friends and readers.

So, a little while ago, we had a get-together. I really love get-togethers because it offers the opportunity to spend quality time with family and friends, have upbuilding conversations, network and just have an amazing time.

Socializing , making friends and more importantly keeping those friends we've made is something we all need regularly to keep going

Also the food part makes get-togethers more interesting (who doesn't like good food😋) So I, along with some sisters of mine prepared a really nice spicy jollof rice. It is a Nigerian meal that tastes absolutely amazing and we cooked it in large quantities using almost half a bag of rice.

I love jollof rice a lot, I prefer it to fried rice too. It's spicy, filled with nutritious spices and natural ingredients too and it's also very satisfying . I dont mind eating this for the whole day😁

Anyway here are the ingredients used in making this delicious meal.

Chicken
Tin Tomatoes
Groundnut oil
Green beans
Carrots
Onions and pepper
Bell pepper
Spices
Curry and thyme

Tin Tomatoes and jollof rice Spices

First, we sliced the onions , carrots , bell peppers, and then parboiled the rice

Next we added the vegetable oil to the fire, and fried all the the chicken pieces
Using the same oil we fried the onions, tomato paste and the chicken stock

Next we added, the salt to taste, pepper, and add some thyme

After some minutes, we added the parboiled rice, stirred lightly and left it to boil well

Then the water dried up and the rice tasted well, the aroma filled the area we were staying

Since we were cooking for about 100 people, I washed all the plates and we began serving along with drinks. We played music and enjoyed ourselves.
