Vegetable Pulao : In My Style
Hi friends, Today I share my Veg Pulao Recipe with you. Hope all of you like it.
It's a very popular dish in India. I think in all most all regions throughout India, this dish is very popular.
This dish is very simple to prepare, no hard work but aromatic, delicious and healthy too.

We can prepare this dish in either pot or a cooker but based on the preparation method we need to adjust the quantity of water.
Today I sharing preparing Veg Pulao using Pot.
This is one of the basic recipes we can see in all Indian Homes. In any function, we see this dish on their menu.
It's not only for special or party need dishes but also great to pack in Offices and School Lunchboxes.
Ingredients:-
Ingredients which we need for preparing this dish.
Basmati Rice: 2 cups
Green chillies : 3 to 4
Onion: 1
Oil: 2 to 3 tablespoons
Ghee: 2 table spoon
Fresh Carrot: 100 grams
Fresh Beans: 100 grams
Capsicum: 1
Potato: 2
Tomato: 1
Fresh green peas: 1/2 cup
Salt: Required for taste
Handful mint and coriander leaves
Ginger, garlic paste: 1 tablespoon
Water: 4 cups
Curd: 1/2 cup
Kashmir Mirchi powder: 2 tablespoon
Coriander powder: 1 tablespoon
Preparation:-
- First, we Raise Rice 2 to 3 times then soak up to 20 minutes. Then after remove all water, before starting preparing.

- In the meantime chop all veggies into small sizes.


- Then we need to prepare Tempering for this dish.
For this heat cooker on add oil and ghee, next to all these items one by one. Then fry all 1 to 2 minutes.
Tempering:-
1 bay leaf
2-inch cinnamon
4 cloves
4 green cardamom
1/2 to 3/4 teaspoon shahi jeera
1-star anise (optional, but recommended)
1 pinch of nutmeg (optional)
lit1-stargad phool (stone flower) (optional)
1 small strand mace (optional)
If you have all those add, if not which you have added only. No issues.Then add chopped onions and green chilli to it, then saute them well.

--Now add mixed vegetables to it, Then fry all those well.

- Now add chopped Mint and Coriander leave Garlic, Ginger paste all to it. Then fry all those veggies well, up to remove the raw smell from it.

- In the meantime, we prepare Masala curd. For this just add the required salt, Kashmiri chilli powder, Coriander powder into curd. Mix them well then keep them aside.

- After frying veggies now add masala curd to it, then mix well. Keep 1 minute.

- Now add drained to it, then mix well. Keep just 1 to 2 minutes

Here mix gently otherwise Rice will be broken so we don't get long rice. So mix slowly.
- Now add the required water to it.
- Then cook on closing with lid, 5 minutes in high flame, 3 mi its medium flame, then 4 to 5 minutes in slow flame.

From adjusting the flame, we cook rice well in Restaurant style.
Finally, garnish with fried cashews, then serve Veg Pulao with fresh Raita.
Now it is ready to serve.

Now my delicious, aromatic special Veg Pulao is ready to enjoy.
