Hello my dear friends of steem foods today I am going to share with you one of my favorite Mexican food recipes although some people say it is Tex-Mex, well in my house we love Mexican food, it is the second favorite because obviously the first one is Venezuelan. Today I will show you how to make fajitas at home from the preparation of the tortillas, the meat, the final assembly and presentation on the plate.

Ingredientes:
Para las tortillas. De estas cantidades se obtienen 12 tortillas medianas como del tamaño de un plato mediano.
3 tazas de harina de trigo
1 cucharadita de postre de polvo de hornear
1 cucharadita de postre de sal
3 cuchariditas de postre de postre de azúcar
2 tazas de agua
Ingredients:
For the tortillas. These quantities make 12 medium tortillas about the size of a medium plate.
3 cups of wheat flour
1 dessert teaspoon of baking powder
1 teaspoon of salt
3 dessert teaspoons of sugar
2 cups of water

En un tazón colocamos las tres tazas de harina de trigo conjuntamente con las cucharaditas de sal, polvo de hornear y azúcar, todo esto lo mezclamos en seco. Una vez bien mezclados nuestros ingredientes vamos a ir añadiendo el agua y vamos mezclando con una paleta de madera hasta obtener una mezcla suave mucho más ligera que la que usamos para las panquecas.
In a bowl we place the three cups of wheat flour together with the teaspoons of salt, baking powder and sugar, all this we mix dry. Once our ingredients are well mixed we are going to add the water and mix with a wooden paddle until we obtain a smooth mixture much lighter than the one we use for the pancakes.

We heat a skillet over medium high heat with a non-stick surface which we will simply grease with a little oil. When the pan is very hot we start preparing our tortillas, I use a small size soup spoon to add the mixture and distribute it in the pan, this bowl is equivalent to half a cup.
La mezcla se distribuye bien en el sartén hay dos formas de hacerla una colocando la mezcla en el centro del sartén luego rápidamente tomamos el sartén por el mango y lo inclinamos hacia adelante, atrás y hacia los lados distribuyendo la mezcla, la segunda es con el mismo cucharon frotamos la mezcla en el sartén, de ambas formas da el mismo resultado todo tiene que ver con la agilidad que tengamos para hacerlo.

We will see how quickly our mixture changes color and solidifies into a compact mass that looks like a cloth, this is the exact moment when we should flip our tortilla. The cooking is extremely fast from side to side, it only takes between 3 and 4 minutes, so we must be attentive when we place the mixture. Once the mixture is compact and where we see that it is not wet, we remove it from the pan and our tortilla is ready.

Ingredientes para la carne

1 kilo de solomo entero o en bistec según su preferencia. (Aquí la verán la receta con la carne entera)
1 ½ cucharadita de sal
1 cucharadita de orégano en hojas
½ cucharadita de pimienta
½ taza de aceite
2 ½ tazas de agua
Ingredients for the meat
1 kilo of whole sirloin or steak according to your preference. (Here you will see the recipe with the whole meat)
1 ½ teaspoon salt
1 teaspoon oregano leaves
½ teaspoon pepper
½ cup oil
2 ½ cups of water

Once the meat is washed and cleaned we proceed to chop our sirloin first into steak and then into fajitas. Once the cut is done we are going to place it in a cauldron or in my preferred case a wok with a lid where we are going to cook it, here is where the variation of the recipe is if you want traditional Mexican, because in most cases the fajitas are made with grilled meat, I prefer to make it in the wok or cauldron to obtain a well cooked meat with a lot of flavor and soft.

Once the meat is cut, place it in the wok with the 2 ½ cups of water, salt, pepper and oregano and cook it over medium high heat for one hour, stirring it from time to time with a wooden paddle.

Once the water has dried and our meat is well cooked, we are going to add ½ cup of oil so that it begins to fry, in this way we obtain the delicious flavor of grilled meat, I really tell you that if you do this way the meat will enjoy it much more because it preserves all the flavor of its own juice mixed with the seasonings that if you notice are basic salt, pepper and oregano, I am one of those who believe that meats should not be put too many seasonings when preparing them because the ideal is to highlight its flavor not hide it.

We take one of our tortillas and add a sufficient amount of meat in the center in the form of a line, in addition we can add the sauce of our preference in my case I accompanied them with a tasty guasacaca criolla, then we folded taking each end and directing it towards the center we will be as if it were an envelope.

We place two fajitas already assembled, and on top, if you like, you can add a little spice, a touch of guasacaca and a pinch of oregano to give our dish more flavor and color.
