The Diary Game: A Stressful Saturday as Chef Supervisor: (03/05/2025)

Happy Sunday greetings/ Happy New month, my dear home community, I hope you all are doing great! I would like to share my experience of a stressful Saturday where I served as the Chef supervisor during a large call food preparation at my place of work.

Saturday Like No other

Yesterday was one of the most tasking day yet a wonderful day I have ever experienced in a long while. I was responsible for supervising the preparation of call food for my follow health professionals, including doctors, dietitians, nurses, pharmacists, urologist etc. I arrived at the venue quite early and determined to ensure that everything went smoothly. The first task was to delegate duties to the cooks, coordinate with the storekeeper to bring out all the food items and deliver them to the cooks. When that was done. I assisted the cooking team in plucking water leaf 😊 a task that always seemed simple but became tiring due to the volume we had to process. Every step of the cooking process I needed to monitor it very closely, like; cutting of the meat, washing, and steam of the soup ingredients to cutting of the vegetables and water leaf. I had to be everywhere just to make sure that nothing went wrong.

After that was accomplished, I then focused on another essential task, i.e., wrapping of garri for the number of those who are on call duty. The quantity was really much hence, I had to ensure uniformity in size and as well the hygiene aspect during wrapping. However, once this was completed, the slicing of the vegetables was completed as well then, I went back to monitor the cooking of the soup. Various soups were prepared, but my main attention was on the melon soup. As a dietitian, I had much concern about the nutritional balance of this particular dish. Apparently, this dish (Melon also known as egusi) naturally contains a high amount of fat. Hence, I made sure they added enough vegetables to it, to boost its fiber and vitamin content. I also insisted on reducing the amount of oil and avoiding the use of artificial spices. If I had not intervened, the cooks would have prepared it based on how they usually cook, hence, sacrificing health for taste and presentation. However, it is my responsibility as a dietitian to ensure that, meals are not just delicious but also healthy for consumptions, whether at home, hospitals, or for social functions.

At 2pm, all the foods were ready and served. Guess what! Then, I felt a sense of accomplishment, but my body was extremely exhausted😫 from the up and down movement and supervision 🥱 By 5 p.m., I finally got home, hurriedly take my bath, then took a glass of smoothie and slide into my bed for a quick rested. It was indeed a tough day, but I was glad I ensured the meals, not just served but, were both delicious and healthy.
