Let us make crispy and tasty “kokis.”
Hello, my dear friends, from Sri Lanka, I believe that everyone is getting ready for the approaching Sinhala and Tamil New Year. Hum... I am also the same; even though my kids are not with me this time, I am still prepared as usual.
I prepared a schedule from April 1 to 10, setting the dates for cleaning purposes of my house. Accordingly, I did different cleaning tasks, such as organizing and cleaning the whole house, washing door and window curtains, removing cobwebs, mopping floors, and washing bed sheets and pillowcases.
In the meantime, my husband did grass cutting and cleaning of the garden and entrance of the road. Now, all our cleaning is over.
I have planned to prepare sweets starting from today. Accordingly, I planned to prepare kokis today. Tomorrow, athirasa and aggala, like this, I have planned everything neatly.
Therefore, yesterday night, I soaked white rice, and this morning, I made it into flour. As it was heavy rain with thundering, I took time to operate the grinder.
I will tell you how to prepare kokis for the benefit of fellow steemians.
Ingredients
- Coconut milk of one coconut
- Rice flour 500g
- A pinch of salt
- a pinch of sugar
- a pinch of turmeric
- Egg
- Coconut oil for cooking the kokis
Method
Pour the coconut milk into a saucepan, then add salt, sugar, and turmeric to it. If you add an egg to the mixture the kokis will remove from the mold nicely. Mix it well and then add the flour little by little and make a smooth mixture. Keep it for a while.
Then placed the coconut oil pan on the stove and heated it. Next, soak the kokis mold in the mixture, put it in the heated oil, and fry them.
If your oil pan is small, fry one kokis at a time; if not, they might stick to each other.
They taste good when they are fried. There will be a lovely sound as it bites. It is simple to prepare and won't take long.
