SLC-S25/W1 | Caramel Pudding
Smooth, creamy, and with a little wobble! Just pure caramel pudding delight.

Leche flan is more familiar to most Filipinos than caramel pudding. With the caramel on top, they’re almost identical. But they’re slightly different. Most of the time, I occasionally cook leche flan. I’ve got to admit, I don’t know much about caramel pudding. It’s my first attempt at this one. I'm not entirely sure how it’ll turn out, but I’m hoping I got it right.

- 60 grams white sugar
- 150 ml. fresh milk

The moment of truth,
Did my family enjoy the taste of caramel pudding that I made?
As I was cooking, my son kept asking what I was making. Got some compliments. "It looks tasty, they said." Of course, I don't want to mess it up and disappoint their expectation. I let my younger son taste it first, and his reaction? Two thumbs up! Whoah! He likes it. Then I had a taste as well. Our family loves it, and we enjoy eating after dinner. It serves as our dessert. I was planning to put one llanera in our fridge, but my son insisted and told me we'd better eat it instead.
Explain the specialty of caramel pudding
The consistency and texture are perfect. It has the right sweetness, not too much. The caramel toppings serve their purpose, not only it add to the presentation, but also to balance the bittersweetness of the caramel pudding. Since I am not using vanilla, I can still sense the smell of the egg, but it doesn't affect the taste. The cooking process is not delicate. The ingredients are also easy to find and probably available almost anywhere. It’s a must-try, and I’m sure anyone can do it. My family loved it, so I’ll be making it more often when I can. Tips:
During the caramelization period (melting of sugar), lower the heat to prevent burning. Also, a flat cooking pot helps the sugar caramelize more evenly. Stirring it doesn't help. Just let it melt and tilt slowly. Do not overcook, it might give a bitter taste, also use only the right amount of sugar. The given is 40 grams, then it should be followed.
I was thinking of adding vanilla, but I am hesitant that it might add a bitter taste, and kids may not like it. That could also be the reason why it is not included as an ingredient by the contest initiator.
To achieve a finer consistency, strain the mixture before pouring it into the molders. Remove those tiny bubbles if they appear because they will leave a hole in your finished product
