Well, the posts are stored on the blockchain, a copy of which is kept on each witness' computer.
Other than providing content for Steemit and other front end web sites, I don't know what sort of use - if any - is being made of them after they pay out. Since the data is available to the public, we can imagine that there will eventually be all sorts of data mining.
