It is another lovely week of Do it yourself. I values and cherishes this contest because it evoke our spirit of creativity. My special thanks goes to @mesola for organising this contest on weekly basis. I have missed this contest for some weeks now, so participating in this week's give me a great joy.
Waking up, it was a beautiful Saturday morning, all family members was in the house since we are on vacation. I decided to make a fast but proteinous breakfast for everyone.It is one of my favourite meals and I was for it .The above meal is boil plantain with egg sauce.
We all know that ripe plantain contains several health benefits, they are rich in carbohydrates and calories while egg is rich in protein then veggies and onion contains mineral and vitamins. From the above, I strongly believe that, it is nice morning combo. It helps in boosting our immunity and provide necessary energy needed to run the day activities.
The good thing here is that, this particular dish is very simple,easy to prepare and it only requires just a few simple ingredients and they are in available, affordable and accessible in the market.
When was the last time you prepare sauce in your house or do you like sauce at all? What ever your answer is,I would like you to come with me let carry out the cooking process.
Ingredients Used
- Plantain
- Egg
- Tomatoes
- Onion
- Spices
- Curry leaf
- Fresh Pepper
- Vegetables oil
- Seasoning cubes
- Salt to taste.
The first thing I did was to peeled the thin membrane from plantain, washed and cut them into my desirable size,put it inside the pot added water to cover it, added salt to taste and cooked it till soft.
My second step comes with Placing of a clean dry pan on my cooker, I added oil to it.
I allow the oil to heat for a minute, I go in with my chopped onion and stir it. The onion give an appetizing flavor to the meal.
The next ingredients added was fresh tomato as shown in the picture, I have properly chopped them small pieces. I fry it for some minute.
This is the most important part of cooking because it holds the magic of taste,so l added seasoning cube, pepper, salt to taste and spices then pour in whisked egg.
Finally I added the curry leaf and cover the pot, allow it to Cook.
I Stir it consistently to mixed well, Taste to know is if the sauce is satisfactory. I bring it down and served it hot.

Dear friend this is my do it yourself for the week, I know that different people from different countries has different ways of preparing sauce depending on their choice and culture but this is how I prefer mine and my family members enjoys it.
The sauce can also be consumed with Rice, Yam, potatoes cocoyam and lot more.
