Hi, friends. All of you are welcome to another cooking blog. I pray that, with God's blessing, all of my friends are doing well. Today, I will share a delicious roasted duck recipe. A common dish in Bengali cuisine is roasted duck. It is eaten more in winter because duck meat is particularly delicious during this time. Nowadays, eating duck meat has become a festival. Duck meat can be served with chitai pitha, hot rice, rice flour roti, paratha, pulao, or khichdi. When duck meat is soft and fluffy, the taste increases manifold. Many people like to eat duck meat. Duck meat is very delicious and nutritious. Finally, let's get to the recipe for roasted duck meat.

Step 1:
- Duck meat is delicious to eat, but it is always said that duck meat has a strong smell. So before going to the main cooking, I washed and cleaned the duck meat well. I then drained the duck meat of any remaining water. I put the duck flesh in a mixing dish and mixed in some turmeric powder, cumin powder, coriander powder, chili powder, ginger paste, garlic paste, salt, and meat seasonings. Then I used my hands to thoroughly mix all the ingredients. After combining it with the duck flesh, I marinated it for half an hour.

Step 2:
- After about half an hour, I heated oil in a pan on the stove and fried it with bay leaves, cardamom, and cinnamon for a while. Then, when the aroma of the spices spread, I added the chopped onion. When the onion was fried and soft, I added ginger paste, garlic paste, and onion paste, then I mixed all the spices very well and ground them.

Step 3:
- I ground the batter and then added the powdered coriander, cumin, garam masala, turmeric, and chili. I ground everything well again, and the taste of the meat also depends on the grinding of the spices. When oil floats on top of the spices, you will understand that the spices have been ground well. At this stage, I will stir the marinated duck meat and mix it with the spices.

Step 4:
- For a great flavor in the duck meat roast recipe, I added some chopped green chilies. Then I will stir it and mix it with the meat, cover the pot with a lid, and cook it.

- Once the meat is ground, I will cover it with enough hot water and cook it on medium heat until the meat is cooked.

- When the broth thickens and the meat is cooked, I will reduce the heat of the stove and cook it for some more time, stirring it. This will make the duck meat and spices stick to the duck meat roast recipe.
