Kinamatisang Uyap
Hello Ladies! I am very happy to share the food I cooked today which is called Kinamatisang Uyap, mostly an appetizer to many but a viand for me and my family.
After paying men to help us plant the field with corn, we were left with a tight budget only to make ends meet and today, my mom volunteered on buying uyap and tomatoes in the market.
By the way, the title kinamatisang Uyap means the uyap was mixed with tomato in cooking. Uyap is a small shrimp and was salted to be preserved for a long shelf life. And it looks like this.

Here are the ingredients to make this simple dish

- Uyap
- Onion
- Shallots
- Garlic
- Oil
- Sugar
- Msg
Procedure
To make this dish, I and my mom prepared the spices first, slicing them before cooking is ideal.

Im very happy my mum and I collaborated in the kitchen today, oftentimes, I wake up late due to my work late at night and I would feel sorry for her. Having this is very special for me.
Since the Uyap was salted shrimp, it was very salty and to prevent too much intake of salt in our body, my mum squeezed out the liquid it came with and we only used the shrimp which showed strong evidence of too much salt in it
My mum had so many things to attend to so I volunteered on cooking, honestly I only know how to cook bit I don't guarantee the taste that is why I need my family to taste my cooking before each dish finale.
To begin with, heated the pan and added the oil, I put in more oil than my usual cooking because this dish requires it, then on to the pan the garlic and shallots came, I sauteed them for a while and added the tomatoes in.
Covering the pan would take a shorter time for the tomato to cook and so I did and not long after, the tomato was tender and I added in the uyap, it does not take long to for it to cook fo I also added in the spring onions and I loved how colorful my dish was.
No salt was added in this dish since the uyap was already very salty. I added a table spoon of sugar to counter the sour the tomato gave, and a tiny bit of msg to lighten the salt in the dish..
Perhaps I added too much tomatoes that the dish was a bit sour, it was also a bit salty than normal but when mixed with rice, it will be neutralized.
I had my mother's help in adjusting the taste, this doesn't mean that I really don't know how to but it's not only me that would eat and their opinion matters.
My dear husband doesn't eat much of uyap so I made him a veggie soup by boiling water, adding shallots , ginger and lemon grass and salt, when it came to a boil, I added the moringa leaves and seasoned with msg. The two is a great pair.

Yes, we do have a few salty dishes that go really well with tomatoes. 😊 Like you used preserved shrimp we use dry-fried fish or sprats, cooked with onions, green chilies, and curry leaves. Adding the tanginess of the chopped tomatoes beautifully balances the saltiness of the dried fish. This dish is full of flavors!
