Cooking my Jollof Rice, A delicious meal// 27-06-2025.
It was Friday, June 27th, and I was exhausted after a long day of teaching my energetic Primary One Pupils. My initial plan for the weekend was to cook a hearty soup, but the stress of the day had taken its toll.
As I entered house and removed my clothes, I quickly took my bath and refreshed, hunger and fatigue combined all on me. While thinking on what to cook, I stepped in to my kitchen, as God may have it, I had rice and other ingredients in the house. I quickly measured 4 cups of rice to my medium sized pot and added water and cooked on my cooking gas. While the rice was cooking, I prepared the ingredients:
• Fish
• Crayfish
• Vegetable oil
• Maggie seasoning
• Onions
• Salt and
• Fresh pepper.

After 20 minutes, I removed the boiled rice from the heat and gave it a good rinse to remove excess starch. Next, I heated some vegetable oil in the pot and began adding the ingredients one by one.

The aroma of onions and peppers filled the air as I stirred the mixture, waiting for the flavours to meld together. Once the ingredients were well combined, I added the filtered rice to the pot, stirring gently to ensure everything was fully incorporated.

I left the Jollof Rice to simmer for 10 minutes, allowing the flavours to absorb into the rice. Finally, my Jollof Rice was ready! I savoured it for both lunch and dinner, feeling grateful for the simple pleasures in life. With my energy replenished, I looked forward to cooking that soup the next day.
