Hello everyone, good morning to you all and welcome back to my blog. I'm so excited to participate in this week contest organized by @ninapenda. Anything that has to do with food count me in because I'm a lover of food.

Eating good food is beneficial to the body and so we should always stay connected. Share some healthy food you ate during the week.

One of the healthy food I ate this week is jollof rice. Rice is one of my favorites meals, aside that it's easily sought in Nigerian market, it's quite easiy to prepare and also contains the six classes of food.

• Share some recipe for some of the food and give us their health benefits.
IngredientsQuantity
Rices4cups
Fresh tomatoes10 sizable seeds
Fresh pepper4 pieces
SaltTo taste
Seasoning cubes2cubs
Groundnut oilEnough to cook the meal
Thyme1 capful
Curry1 capful
Bay leaf4leaves
Garlic3 pieces
Onions1 sizable
Tumeric1 piece
Ginger1small size
CrayfishEnough to cook the meal
Procedure for cooking Jollof rice
  • Wash and steam the meat and set it aside.

  • Wash and parboil the rice for about 7 minutes.

  • Wash and blend your fresh tomatoes and peppers.

  • Slice your onions and garlic.

  • To a cooking pot, add groundnut oil, heat up the oil and add curry powder, salt, seasoning cubes and thyme and stir it.

  • Add Garlic and Ginger and fry until it looks crystal, then add the tomatoes.

  • Fry for awhile inorder to intensify the flavor.

  • Add enough water to cook the rice to the pot.

  • Blend ginger, tumeric and crayfish and add it to the pot.

  • Add the rice when the rice boils.

  • Turn off the heat when the water completely dries up.

  • Taste for salt and stir the food.

  • Your delicious Jollof rice is ready.

Health benefits of eating Jollof rice
  • High carbohydrate content

It is very high in Carbohydrate, the end product is glucose which gives energy to the body.

  • Vitamins

The tomatoes and peppers use in cooking it is very rich in Vitamin A and C

  • Antioxidants properties

The tomatoes use in cooking Jollof rice contains Lycopene an Antioxidants that helps to protect the body from damage and inflammation.

  • High Iron content

It also contains a high amount of iron which is essential for the body immune functions.

Do you think cooking should be taught in schools or it should just remain the way it is with the catering institution.

I feel cooking shouldn't be taught in schools, my reason being that students already has lots of workloads in School, adding Cooking to it would be lots of stress. So in my opinion, any student that has interest in Cooking should go to a Catering School or Culinary School and study it fully.

• If a friend spent hours cooking a meal for you and finally it tasted bad, what will be your reaction?

Being a shy person and also someone that doesn't like hurting people's feelings, I won't be able to tell my friend that her food tastes horrible. I will just tell her to reduce the quantity of the food she dished for me and then manage it.
