Hi friends, I am happy to write here today, how are you all doing? Hope great

Today I will love to share my food diary with us, Toda was a very hectic day for me. It is a Monday and we are in holidays because of salla celebration.

I woke up, going to around the house and the whole place was in a mess, so I didn't want to wait for anyone to tell me what to do, I started with the kitchen because that is my office as the only female child in the house.

I cleaned up the kitchen, wash the dirty dishes, sweep the floor and I also mop it. I make sure that the whole kitchen was cleaned. I can't cook in a dirty kitchen.

When I was done I then go through the house surrounding, making sure that the whole place was clean.

Before this morning, I was told of what to prepare for breakfast and since we ate rice last night, we needed to swallow this morning.

There is this native soup that I will be sharing with us, it is call EDITAN SOUP.

Today I will be sharing with us how I cook dry EDITAN leaves with okra soup..

INGREDIENTS IN COOKING EDITAN SOUP

  • Dry EDITAN leaves
  • Okra
  • Fish
  • Pepper
  • Seasoning cubes
  • Fish
  • Grayfish
  • Red oil
  • Canda
  • bicarbonate
  • stockfish

Before I proceed, remember I said this is one of the ibibio native soup, though we normally cook this leaves when it is fresh but some people dry them and keep just like what I did. We have dry EDITAN leaves at home.

This leaves is always bitter and is medicinal. It healthy benefits is very effective.

The leaves was already sliced so what I did, I pounded it by sprinkling water on it so that it will be easy to pound. When I finish pounding, I use cool water to rinse it and I pour inside the pot and put it on fire.

I added the amount of water I will use in cooking the soup. Then I allow it boil, I added bicarbonate to it so that it will reduce the bitterness of the leaves.

I allow it to boil until the bitterness was no more there.

While the leaves was on fire, I have prepare and wash my proteins which is my fish, Canda and stockfish.

Immediately I tasted the soup and there was nothing like bitter again, I added my proteins, then add seasoning cubes and crayfish and I covered the pot to Cook well for some minutes.

While it was boiling, I added red oil to my soup and then I added okra as the last ingredient. Why I added okra last is because I want it to look fresh.

After adding Okra I allow it to boil for some second and then the soup was ready.

I dish it out for the family and I dish mine.

This soup you cand decide to use any swallows of your choice. For me I use garry to eat my soup.

So guys this is what I eat as breakfast for today. When I was done eating. I took my bathe because I was sweating and tired at the same time.

So when I finish bathing, I went to bed and rested because it was already 12 mid day.

I slept and I woke up by 3pm.

For the lunch, I needed something light because I was still heavy because of the food I eat in the morning.

So since there was cake ingredients, I decided to prepare cake for the family and I ate mine.

When I finish eating, I needed to play a ludo game with my baby brother. He is very good in playing this game. All this while, he has been the one who has been winning and today I won.
I scored him six while he scored 4.

I was so happy I won, at least for once I showed him that I am the senior and I can play the game.

We played this game till night fall. I didn't feel hungry of eating dinner, but others in my family did so I decided to share with us my food diary for today.
